TURKEY ROLL (THAI STYLE)



This recipe is simply all the meat from turkey without the bones. Turkey breast is a good choice poultry for a healthy diet. It is excellent low in fat and high in protein food. So, try this impressive Turkey Roll (Thai style) menu for your special occasions.

Preparation time: 30 minutes
Cooking time: 2 hours


INGREDIENTS:

PEANUT SAUCE:
1 large lime zested and juiced
2 tbsp. reduced sodium soy sauce
2 tbsp. green onion, minced
1 tbsp. cilantro, minced
2 tbsp. crunchy peanut butter
2 tsp. light brown sugar
1 tsp. fresh ginger root, peeled and minced
1 tsp. fresh garlic, minced
¼ tsp. red pepper flakes

 ASSEMBLY:
4 pieces 20 cm whole wheat tortillas (high protein)
450g oven roasted turkey breast, sliced thin
60g red onion, sliced thin
60g lettuce washed, drained, chilled and shredded
4 tsp. cilantro washed, drained and chilled

PROCEDURE:
1. In a medium bowl combine lime juice and zest, soy sauce, onions, cilantro, peanut butter, sugar, ginger root, garlic, and pepper flakes. Stir well.
2. Spread each tortilla with peanut sauce.
3. Layer each with 120g sliced turkey.
4. Evenly sprinkle each with 1 tbsp. onion, 1 tbsp lettuce, and 1 tsp. cilantro.
5. Roll up tightly and cut on a diagonal.
6. Serve chilled.
