Try this Italian dish, special and delicious spiendini di mare with scallops, prawns, and fish. These scallops are popular shellfish used in many styles of cooking. It is also sweet and mild taste. Very high in protein and virtually no fat.

Preparation time: 10 minutes
Cooking time: 20 minutes

6 tbsp. olive oil
1 cup seasoned bread crumbs
16 huge prawns (cleaned and deveined)
16 medium scallops
500g fillet of fish (e.g. mahi-mahi), cut 1 ½ thick
½ cup lemon juice
½ cup chicken broth
½ cup white wine
½ cup fresh parsley (chopped)
6 tbsp. Butter
3 tbsp. flour
Salt and pepper to taste

1. Place alternating on each skewer 2 prawns, 2 scallops and 2 pieces of fish.
2. Brush with oil and carefully roll into breadcrumbs.
3. In sauce pan, heat the lemon juice, chicken broth and wine.
4. Mix the flour into the softened butter and whisk the lemon mixture little a time until the desired consistency is reached.
5. Keep over low heat while you grill the seafood.
6. Just before serving stir in the parsley.
7. Grill the skewer over high heat for 3 minutes on each side or until done.
8. Place on a platter and drizzle the sauce over. Serve hot.

Cooking tip:
Seafood actually needs less cooking than most people think. Check the fish fillets to determine if the skewers have cooked long enough. Don’t overcook.
