Snapper is marine fish that is typically reddish. It is a great fish for grilling. This fish also can take many flavors from hot and spicy to sweet.  Try this snapper fish with a spicy peanut sauce. Creamy, tasty and flavorful.

Preparation time: 15 minutes
Cooking time: 30 minutes

600g fresh snapper fillets, diced into large cubes
12 bamboo or metal skewers
1 tsp. Tabasco sauce
½ bunch coriander chopped
1 tsp. turmeric
1 cup jasmine rice
1 ½ cups water
2 tbsp. peanut oil

Serve drizzled with spicy peanut sauce and garnish with fresh lime wedges.

1 tbsp. peanut oil
1 small onion, finely chopped
1 tsp. garlic, finely diced
½ cup raw peanuts
1 400 ml tin coconut milk
1 tsp. Tabasco sauce
1 lime juiced
Salt and pepper
1 lime cut into wedges

1. Mix the Tabasco sauce, coriander and turmeric and rub into the snapper and place on the skewers . Refrigerate.
2. Rinse the jasmine rice once under water and place with sauce with the water.
3. Bring to boil and then simmer uncovered until cooked.
4. Gently pan fry the snapper skewers in peanut oil until cooked.
5. Place the peanut oil in stainless steel pot and heat.
6. Add the onion, peanuts and cook for 3-4 minutes.
7. Add the coconut milk and simmer for 15 minutes.
8. Pour the sauce using a stick blender and add the Tabasco sauce, lime juice, salt and pepper.
