Have your dinner with this classic style recipe Sicilian
Fish Salad with shallots, capers, tomatoes, and raisins.
For this dish we used groupers fish or (lapu-lapu). This
fish is widely cultured in the pristine waters of Philippines. Eating fish once
or twice a week may reduce the risk of diseases ranging from childhood asthma
to prostate cancer. Also an excellent source of omega 3 fatty acids. Low in fat
and high in protein.
Preparation time; 15 minutes
Cooking time: 15 minutes
INGREDIENTS:
2 tbsp. olive oil
600g small lapu-lapu fish
2 cloves garlic finely, chopped
4 shallots (red onions) sliced thinly
120g pitted green olives
120g capers
120g white wine vinegar
60g raisins (soaked in water for 10 minutes)
4 large tomatoes cut in quarters
150g basil leaves fresh
PROCEDURE:
1. Heat 1 tbsp. of oil in pan, add shallots and sauté for
5 minutes.
2. Add garlic, olives, capers, and drained raisins and
cook 2-3 minutes and remove to a bowl.
3. Season the fish with salt and pepper.
4. Heat the remaining oil in the pan on high heat and add
the fish.
5. Fry for 2 minutes on each side before covering with
the capers olives mix.
6. Pour the vinegar and bring the heat for 2 minutes.
7. Check if the fish is cooked and sprinkle with mint
8. Allow the fish to cool in the vinegar.
9. Serve with tomato and basil salad.
