Impress your guests with this special chicken stuffed with herb and cheese. Very tasty and looks elegant. It’s a good choice for your special guests.

Preparation time:15 minutes
Cooking time: 30-40 minutes

8 pieces chicken thighs
4 pieces carrot, sliced
4 tbsp.fresh parsley, chopped
2 pieces onion, sliced
2 tbsp. fresh thyme
5 pieces leek, sliced
2 tbsp. fresh spring onion
½ cup low fat cheese, shredded
15 tbsp. olive oil
3 cups chicken stock
2 cups dry white wine
Salt and pepper to taste

1. Trim off fat and skin on chicken thighs.
2. Deboned chicken thighs, slit flat, underside.
3. Place herb and cheese in each thigh and fold in.
4. Secure with skewers.
5. Heat oil and pan fry
till golden brown.
6. Deglaze with wine ( until amount of wine is reduced by half ), and add in carrots, onions, leeks and seasonings.
7. Cover and simmer for 20 minutes until cooked.
