Pilaf refers to a grain dishes seasoned with broth and spices. Enjoy your dinner with these chicken pineapple pilaf. A wonderful tasty and nutritious dish for the family.  

Preparation time: 5minutes
Cooking time: 35 minutes

1 large boneless chicken
½ cup green bell peppers (remove stem and seeds)
½ cup onion diced
½ cup pineapple chunks (keep juice to add)
2 tsp. curry powder
1/3 cup chicken stock
1/3 cup long grain rice

1. In a saucepan with lid, sauté onion in olive oil for 1 minute, add curry powder and rice.
2. Stir until the rice is coated with oil and curry powder.
3. Add chicken, pineapple, and green bell peppers.
4. Add the stock and juice and cover the pan with a tight fitting lid.
5. Cook over low heat for 20 minutes then remove from heat.
6. Leave covered and let it sit for additional 15 minutes.

Serve a glass of white wine and relax and enjoy.
