Al
forno is a food that has been baked in an oven. Italian dishes are commonly
prepared in this way. This recipe is also an elegant because of its look and its

INGREDIENTS:

medium size squid (separate hood from tentacles)
4
tbsp. olive oil
3
cloves garlic, sliced
1
can crushed tomatoes (28oz)
4
tbsp. red wine
Salt
and pepper to taste
Handful
chopped fresh basil and parsley
Lemon
wedges
STUFFING:
1
cup coarse bread crumbs
½
small onions, minced
1
clove garlic, minced
1 hard boiled egg
2
tbsp. capers
10
black olives pitted and chopped
PROCEDURE:

Preheat oven 375 degrees

Heat oil in pan and sauté the garlic until golden.
3.
Mix tomatoes and add basil, raise heat and add the wine, bring to heat and
stir.

Cover the pan.
5.
Reduce the heat to simmer for 15 minutes.
6.
Stuff each squid hood with the prepared stuffing mix up ½ or ¾ full and pin the
opening with a toothpick.
7.
Pour the sauce into a baking pan then arrange the squid hoods on top.
8.
Cover the pan tightly with foil and bake for 10 minutes.
9.
Remove the foil gently, baste and bake for further 5 minutes without the cover.
10.
Sprinkle basil and parsley and serve with lemon wedges.
*Please
remember not to overcook the squid as it will get tough.
