Having a menu with tomato sauce is very good because its cancer free and heart healthy future.

400g onion, sliced
1kg eggplant, cut into small cubes
1 pouch spaghetti sauce
80 pieces sliced bread
400g cheese, coarsely grated

1. Sauté onions and eggplant. Add spaghetti sauce.
2. Cook for 5 minutes.
3. Heat frying pan.
4. Spread every 2 tbsp. of mixture on 40 slices of bread.
5. Sprinkle with cheese.
6. Cover each slice with another slice of bread.
7. Toast in pan over low heat until brown on both sides or until cheese melts.
