CHEESY SEAFOOD PIE



This pie has a lot of tasty flavor like cheese, milk, and butter. Delicious and easy to prepare.

INGREDIENTS:
300g prawns, shelled and deveined
200g fish fillet, cut into bite size pieces
200g scallop, cleaned and trimmed
4 large potatoes, boiled and mashed
½ cup milk
2 tbsp. butter
1 cup cream
1 cup finely grated (Quezo de bola,) cheese
1 onion, finely chopped
2 cloves garlic, finely chopped
½ cup finely chopped, parsley
Salt and pepper to taste

PROCEDURE:
1. In a small sauce pan, melt 2 tbsp. water and add milk. Bring to a simmer and pour over mashed potatoes. Mix well and season to taste.

2. In a pan, sauté onions and garlic in 2 tbsp. butter. Add prawns and sauté for 2 minutes. Next add scallops and fish fillet and continue cooking for 1 minute.

3. Turn heat to low and add cream, parsley and grated cheese. Stir gently as not to break the fish fillet. Season with salt and pepper.

4. Preheat oven to highest temperature. In a buttered baking dish, place seafood mixture in the bottom. Spread or pipe mashed potato over seafood.

5. Broil in oven for 20 minutes or until potato topping is golden.

6. Serve hot.
