MOZZARELLA SPRING ROLL WITH BASIL



INGREDIENTS:
120g mozzarella cheese
2 tbsp.  Cashew nut/ roasted and ground
.05g basil leaves/ fresh
3 pieces lumpia wrapper
.05g cilantro leaves
25g flour
½ tsp. garlic/ minced
35g mayonnaise
1 tsp. lemon juice
15g mesclun
Egg white
Salt and pepper to taste

PROCEDURE:
1. Cut mozzarella cheese into 3x ½ inches, making 6 portions.
2. Using egg white, dip portioned cheese and dredge it on flour and ground cashew nut mixture.
3. Wrap in fresh basil leaves and lumpia wrapper.
4. Then fry the mozzarella sticks.

FOR DRESSING:
In a blender combine cilantro, garlic, mayonnaise, lemon juice, salt and pepper to make the sauce.
