CAROSA MOZZARELLA

INGREDIENTS:
80g mozzarella cheese
30g bread
45g tomato/ diced
15g capers
.05g Italian seasoning
30g butter
1g garlic/ minced
1 piece egg/ beaten
Salt and pepper to taste
3 tsp. vegetable relish
20g garlic mashed potato
20g bread crumbs

PROCEDURE:
1. Sliced mozzarella and bread measuring 2 ½ x 2 ½ , then dip in beaten egg and cover it with Italian seasoning and bread crumbs.
2. In a 375 degrees F fryer, cook breaded mozzarella until golden brown. Set aside.
3. To make the sauce, in a sauce pan cook butter until brown then add on the capers and diced tomato, salt and pepper.
4. Simmer for 2 minutes hen set aside.
5.  Scoop mashed potato and place it on the center of the plate, then the sauce.
6. Place the cooked mozzarella on top of the mashed potato then garnish with vegetable relish
