QUENELLE OF SMOKE CHICKEN WITH WILD BERRY DRESSING



INGREDIENTS:
Smoke Chicken Mouse:
50g smoke chicken breast
100ml whipping cream
1/8 piece lemon

PROCEDURE:
Combine all ingredients and blend in a food into a mousse.
Set aside and keep chilled.

INGREDIENTS:
Tomato Compote:
3og peeled and seeded tomatoes, chopped
Pinch of thyme
Pinch of oregano
5g sugar
15ml olive oil
15g almond silvers for garnish

PROCEDURE:
Combine all ingredients and set aside in the chiller.
