OPEN- FACED SPANISH SARDINES SANDWICH

INGREDIENTS:
1 carrot, grated
2 tbsp. fresh onion leaves or leeks, finely minced
½ c or ½ bar cream cheese
8 thick slices sugar free wheat bread
2 bottles Spanish sardines in oil, drain well
1 small red onion, thinly sliced
Salt and pepper to taste

PROCEDURE:
1. Blend carrot, kangkong , and green onion leaves into the cream cheese using a fork.
2. Season to taste.
3. Spread cream cheese mix evenly over a slice sugar free wheat bread.
4. Have the sardines lengthwise, then arrange them skin side up on top of the cream cheese spread.
5. Top with red onions slices.
