2 ½ cup soy sauce
1 ½ tsp. black peppercorn
Garlic minced
2 pieces bay leaves
¾ cup white vinegar
Infused with lemon grass

1. Add chicken and 1 tbsp. garlic in a bowl with ½ cup of soy sauce.
2. Add pork and 1 tbsp. garlic in a bowl with ½ cup of soy sauce.
3. Let the meats marinate overnight.
4. Fry the chicken in oil until the surface has brown and then remove and strain.
5. Fry the pork until brown. Remove and strain.
6. Add chicken into the pot with ½ cup soy sauce, ¼ cup vinegar, ½ tsp. peppercorn, ½ tsp. garlic, 1 bay leaf and 300g of lemon grass.
7. In another pot, add the pork, 1 cup soy sauce, ½ cup vinegar, 1 tsp. peppercorn, 1tsp.garlic, 1 bay leaf and 400g of lemon grass.
8. Cover both pots tightly with foil and poke a small hole on the foil before simmering. Simmer chicken for 25 minutes and the pork for 45 minutes.
9. Once the chicken and the pork adobo have cooked, combine both and serve.
