LEMON GRASS BULALO



INGREDIENTS:
4 pieces beef shanks
8 stalks of lemongrass tied into a knot
2 medium onions, quartered
1tsp. whole peppercorns
Cabbage
Potatoes
String beans
Pechay or other vegetables of choice
Fish sauce to taste
Water

PROCEDURE:
1. In a large pot, place beef shanks, lemongrass, onions and peppercorns.
2. Pour in water to cover beef and bring to a boil.
3. Once boiling, skim off of scum that rises the surface and lower to heat to simmer.
4. Cook beef over low heat till beef is just tender.
5. Add veggies of choice and keep simmering till cooked and beef is very tender.
