CRAB STUFFED FISH TIMBALES WITH NANTUA SAUCE



INGREDIENTS:
100g mahi-mahi fillet
3g crab meat
5g onions
5g garlic
125ml whip cream
50g asparagus spears
100g potatoes, peeled and diced
Pinch of paprika
Pinch of thyme
125ml nantua sauce

PROCEDURE:
1. In a food processor, blend, mahi fillet, garlic, onions, and whip cream
2. In a molder, place blended fish mixture and place crab meat in the center, cover with remaining fish mixture.
3. Bake in an oven in a baine marie for 20-25 minutes at 300 degrees C until cooked.
4. To make the farmers potatoes, boil potatoes until cooked
5. When cooked, sauté potatoes in oil together with paprika, salt and thyme.
6. Blanche asparagus and tie in a bundle using spring onion.
7. When all is cooked, arrange fish timbales, asparagus and potatoes on a plate and top with sauce.
