APPLE NUT CAKE

INGREDIENTS:
Cake:
4 tbsp. butter
1 cup sugar
1 piece egg
1 cup all-purpose flour
1 tsp. baking soda
½ tsp. Cinnamon
¼ tsp. salt
2 pieces large tart
Apples, cored and chopped
1 cup coarsely chopped walnuts

Glaze:
4 tbsp. butter
1/ 2 cup sugar
2 tsp. cornstarch
¼ cup evaporated milk
1 tsp. lemon juice
1 tsp. vanilla extract

PROCEDURE:
1. Pre heat oven to 350 degrees F.
2. Coat pan with cooking spray.
3. Cream 4 tbsp. butter and 1 cup sugar.
4. Add egg and beat well.
5. Stir in flour, baking soda, cinnamon, salt, apples and wall nuts.
6. Batter will be stiff.  Spoon into prepared pan; smooth top.
7. Bake about 55 minutes.
8. Combine remaining 4 tbsp. butter, ½ cup sugar, cornstarch and evaporated milk in a saucepan; bring to boil over medium heat.
8. Boil 2 minutes stirring constantly.
9. Remove from heat; stir in lemon juice and vanilla.
10. Pour over apple cake.
11. Serve warm.
