ANIS FLAVORED SPINACH PUREE



INGREDIENTS:
100g spinach
¼ cup anise wine
1cup stock
Salt and pepper to taste

PROCEDURE:
1. Wash and trim spinach.
2. Blanch and shock spinach.
3. Puree spinach.
4. Add spinach puree to stock and simmer.
5. Add anise wine and reduce.
6. Season with salt and pepper.
