PORK MENUDO WITH LIVER SPREAD



INGREDIENTS:
2 tbsp. cooking oil
1 tbsp. garlic, minced
1 medium onion, chopped
1 kilo pork cut into small cubes, cooked until tender
½ cup tomato paste
4 cups water
1 cup red bell pepper, diced
2 cups potatoes, cubed and fried
1 cup carrots, cubed
185g liver spread
1 tsp. salt
¼ tsp. pepper

PROCEDURE:
1. Heat oil in a pan. Sauté garlic and onions.
2. Add pork cubes ad fry until golden brown.
3. Stir in tomato paste.
4. Add water. Leave to boil until sauce slightly thickens.
5. Add red bell pepper, potatoes and carrots.
6. Stir in a liver spread and mix into the sauce until well blended.
7. Season with salt and pepper.
