BEEF SALAD ON LIGHTLY FRIED BEET CHIPS WITH PRESTO OIL



INGREDIENTS:

3 thin slices of red beets peeled and season
50g beef fillet - finely chopped
10g red onions – finely chopped
pinch of coriander
pinch of thyme
pinch of oregano
1/8 pc. of lemon
small bunch of assorted lettuce
15 ml. pesto

PROCEDURE:

Fry beets in e low heat until cooked, remove excess oil and arrange at the center of the plate.
Lightly sauté beef in a little oil, season with salt and pepper,
Add in the rest of the ingredients including the juice of lemon.
Mix together and season with salt and pepper.
Place in molder and arrange at the center of the plate.
Add in the lettuce and drizzle with vinaigrette and pesto oil.
